I didn't think I liked pumpkin, hate pumpkin pie (which was NOT served this Thanksgiving, thank goodness) but then I tried my aunt's pumpkin soup and I loved it. One of these days I'll have to give it a try.<br />All the food looks so good! I also try to cook with what's left, matter of fact I plan my menus around what will be left over. I'm terrible at improvising, so it helps me to plan it out. Soups are a great way to incorporate leftover cooked vegetables, or fresh ones that are losing quality. I also use leftover bits of cooked meat and vegetables, along with lots of fresh herbs and seasonings and encase them in phyllo pastry. Again, I may add any leftover chicken or turkey. I have a butternut squash soup recipe and an acorn squash soup recipe that is similar to yours. I use coconut milk instead of cream since I am dairy free. Looks great !<br />One idea for using Puff pastry that I haven't made in quite some time.... puff pastry tart shells filled with cherry preserves and a bit of brie then baked in the oven.<br />Everything tastes better with butter....was a comercial years and years ago :)<br />and butter and cinnamon on toast ...now that's a treat :)<br />Enjoy the weekend !
