A proud mama, and chocolate mousse!

My baby girl, the one who will be turning 20 this year, has had her "Owls in the Kitchen" design published in the new issue of Australia's Creating Country Threads magazine!


Miss Blossom has her very own style, and it's so cute...


She also got a confidence boost when a dear reader, Joy from Bundaberg, emailed with a photo to show Miss Blossom that she'd quickly stitched up this project after receiving her copy of Creating Country Threads!

 My girl really does love to be in the kitchen. Not to cook, but to enjoy what I make!
She told me this morning that the best part of her day is breakfast with me. I usually prepare something simple and nutritious for her while she gets ready for work and then we chat across the table about God, the day ahead, and other deep thoughts, while she eats her meal and sips her coffee...


Then I pack her lunch and send her off on her way with a Scripture or two in her mind, praying that her spiritual and nutritional needs will be met.

Last night when she arrived home after work I was in the kitchen (again) playing around with a new recipe I'd found. More and more, we and Mr E are enjoying an increasing number of raw meals added to our weekly menu, but the thing that really surprises us is how good raw desserts are - especially using ingredients you wouldn't normally imagine as being dessert foods. Like avocados.


 This array of ingredients came together in my food processor...


...and in just 5 minutes did a Cinderella, turning into Chocolate Mousse!


SO delicious!


Gluten free / Lactose free. YUM.

I got the main idea for the recipe HERE but altered the sweetener and the amount of sweetening used. Here's my version:

Raw Chocolate Mousse

2 ripe avocados
2 tablespoons of organic coconut oil
2 teaspoons organic vanilla extract (not essence!)
1/4 cup unsweetened almond milk
1/2 cup organic raw cacao powder
3 soft medjool dates 
2 tablespoons of rice malt syrup

Place all in the bowl of a food processor, and blitz until smooth.
Pour into a bowl and chill.
Serve with fresh fruit.

Lorrie, it was delicious. Really. Very rich, so you only need a few spoonfuls with fruit, but I'll be making this again. :-)
